Cocktail

  1. 1

    Prepare glass

Chill a tall pint glass or highball by filling it with ice and a little cold water for 1–2 minutes, then discard the water and most of the ice. Leave a few ice cubes in the glass if desired.

  2. 2

    Mix base

In a mixing glass or shaker without shaking, pour 1 oz gin, 0.5 oz fresh lime juice, and 0.25 oz simple syrup. Stir gently to combine for about 10 seconds to integrate the ingredients.

  3. 3

    Assemble

Add fresh ice to the chilled glass (about 3/4 full). Strain the gin-lime-simple mixture over the ice.

  4. 4

    Top with beer

Slowly pour 12 oz of chilled Asahi (or other dry Japanese lager) down the side of the glass to preserve carbonation and create a gentle head. Pour until the beer reaches the top, leaving a small gap so it doesn't overflow.

  5. 5

    Finish and garnish

Give the drink a very gentle stir once or twice to integrate the beer with the gin-lime base (avoid vigorous stirring to keep carbonation). Garnish with a lime wheel or wedge on the rim.

  6. 6

    Serve

Serve immediately while cold and fizzy. Provide a straw or encourage sipping directly from the glass to enjoy the layered flavors of beer with the bright gin-lime base.
