    Prepare honey syrup

    If you don't have honey syrup prepared, combine equal parts honey and warm water (1/4 cup honey + 1/4 cup warm water). Stir until fully combined and cool before using. This yields enough syrup for several cocktails.

    Dry shake (if using egg white)

    Add 2 oz gin, 3/4 oz Cocchi Americano (or dry vermouth), 1/2 oz fresh lemon juice, 1/2 oz honey syrup, 2 dashes orange bitters, and 1/2 egg white to a cocktail shaker. Seal and shake vigorously without ice for 15–20 seconds to emulsify and build foam.

    Wet shake

    Open the shaker and add a handful of ice (about 4–6 cubes). Re-seal and shake hard for 12–15 seconds until the shaker is very cold to the touch and the mixture is well chilled.

    Strain

    Double-strain the cocktail into a chilled coupe or Nick & Nora glass using a fine-mesh strainer to remove ice shards and any egg white solids. If you omitted egg white, perform a single strain into a chilled glass.

    Garnish and serve

    Express the oils of a lemon twist over the surface of the drink by holding the twist skin-side down over the glass and giving it a sharp squeeze. Run the twist around the rim, then drop it into the cocktail. Serve immediately.
