Green Shakshuka | Herb Salad
In a bowl, mix olive oil, lemon juice, za'atar, minced garlic, salt, and black pepper. Add the chicken halves and coat them well in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.
Preheat your oven to 400°F (200°C).
Place the marinated chicken halves on a baking sheet, skin-side up. Roast in the preheated oven for about 40-45 minutes, or until the chicken is cooked through and the skin is crispy.
Once cooked, remove the chicken from the oven and let it rest for 10 minutes before serving.
