    Rinse and chill

    Place shucked oysters in a bowl of ice water for 10 minutes to firm the texture and remove excess brine. Drain on paper towels and pat gently dry; set aside on a tray in the refrigerator until ready to bread.

Breading station

    Prepare dry mix

    In a shallow bowl or plate, whisk together all-purpose flour, cornstarch, cornmeal, salt, black pepper, garlic powder, paprika, and cayenne until evenly distributed.

    Prepare wet mix

    In a separate shallow bowl, beat the eggs with the milk and hot sauce until smooth.

    Set up station

    Arrange three stations: (1) dry mix, (2) wet mix, (3) a clean plate with extra flour or remaining dry mix for a final dusting. This will make breading efficient and prevent clumping.

    Dredge oysters

    Working in small batches (4–6 oysters at a time), lightly coat each oyster in the dry mix, then dip into the egg mixture, letting excess drip off, then return to the dry mix and press gently to adhere a uniform coating. Place breaded oysters on a wire rack set over a sheet pan. Repeat until all oysters are coated.

    Rest

    Let the breaded oysters rest on the rack for 10–15 minutes in the refrigerator; this helps the coating set and reduces falling-off during frying.

Frying

    Heat oil

    Pour oil into a heavy, deep skillet or a Dutch oven to a depth of about 1.5 inches (about 2–3 cups depending on vessel). Heat oil over medium-high heat until it reaches 350°F (175°C) on a deep-fry thermometer. If you don’t have a thermometer, test by dropping a small pinch of dry mix into the oil—if it sizzles and rises steadily, the oil is ready.

    Fry oysters

    Fry oysters in batches of 4–6 without crowding the pan, cooking for 1½–2½ minutes per side until golden brown and crisp. Use a slotted spoon or spider to turn and remove oysters. Internal oyster texture should be tender — do not overcook. Maintain oil temperature around 325–350°F (160–175°C); adjust heat between batches as needed.

    Drain

    Transfer fried oysters to a wire rack set over a sheet pan or paper towels to drain excess oil. Lightly season with a pinch of salt immediately after frying, if desired.

Finish & serve

    Garnish and plate

    Arrange fried oysters on a warmed platter. Sprinkle chopped parsley over the oysters and serve with lemon wedges and remoulade or tartar sauce on the side.

    Serve immediately while hot and crisp. Leftovers can be kept in a single layer on a baking sheet in a 300°F (150°C) oven for up to 15–20 minutes to recrisp, but best enjoyed fresh.
