Lollipop Preparation

Prepare the Mixture

In a medium saucepan, combine the granulated sugar, corn syrup, and water. Stir the mixture over medium heat until the sugar dissolves.

Cook the Syrup

Increase the heat and bring the mixture to a boil without stirring. Attach a candy thermometer to the saucepan and boil until the temperature reaches 300°F (hard crack stage).

Add Flavoring and Coloring

Remove the saucepan from heat. Once the bubbling has stopped, carefully stir in the flavoring extract and food coloring (if using).

Mold the Lollipops

Quickly pour the candy mixture into lollipop molds, filling them about three-quarters full. Insert lollipop sticks into the center of each mold.

Cool and Set

Allow the lollipops to cool completely at room temperature until hardened. Once set, remove them from the molds.

Store and Enjoy

Store the lollipops in an airtight container at room temperature. Enjoy your homemade Hammond’s Lollipops!
