Prep strawberries
Select and wash
Choose 16–18 large, ripe strawberries with green tops intact. Rinse them thoroughly under cool running water to remove dirt. Pat completely dry with paper towels, then transfer to a clean towel and air-dry for 20–30 minutes. Any surface moisture will prevent the chocolate from sticking, so ensure strawberries are fully dry before dipping.
Line a baking sheet with a single layer of wax paper or parchment. Arrange strawberries on the lined sheet, stem-side up, ready for dipping.
Make semisweet chocolate coating
Melt chocolate
Place 10 oz semisweet chocolate chips in a microwave-safe bowl. Add 1 tsp neutral oil (or melted coconut oil) and 1 tsp cocoa powder if using. Microwave in 20–25 second intervals at 50% power, stirring thoroughly after each interval until chocolate is mostly melted and smooth. Continue stirring off heat until fully melted and glossy. Alternatively, melt using a double boiler over gently simmering water, stirring frequently.
Adjust consistency
If chocolate is too thick for a smooth dip, add an additional 1/4–1/2 tsp oil and stir until it reaches a thick but pourable consistency that will coat the strawberry evenly without sliding off.
Dip strawberries
Dip and set
Hold a strawberry by the stem or leaves and dip it into the melted semisweet chocolate, tilting the bowl if needed. Submerge about two-thirds of the berry, then lift and allow excess chocolate to drip back into the bowl while gently rotating to create an even coat. If you want a straight chocolate edge, start at the base and lift in a steady motion for a clean line. Place the dipped strawberry onto the prepared parchment, stem-side up. Repeat with remaining strawberries.
Add toppings (optional)
If using sprinkles, chopped nuts, or coconut, sprinkle them onto the chocolate immediately after placing the strawberry on the parchment so they adhere before the chocolate sets.
Allow dipped strawberries to sit at room temperature for 10–15 minutes to set slightly.

Spoon the melted white chocolate into a small piping bag or a resealable plastic bag and snip a 1–2 mm corner. Lightly drizzle the white chocolate back and forth over the semisweet-coated strawberries to create thin stripes. Alternatively, use a fork to flick lines. Return strawberries to the parchment.
Set and store
Let the strawberries sit at room temperature until chocolate is firm, about 30–45 minutes. If your kitchen is warm or you want to speed setting, transfer the baking sheet to the refrigerator for 10–20 minutes, but avoid prolonged refrigeration (over 2 hours) which can cause moisture formation and soften the chocolate.
Serve within 24 hours for best texture and flavor. Store leftovers in a single layer in an airtight container in the refrigerator for up to 48 hours, placing a paper towel between layers to absorb moisture.
