Prepare the Calamari
In a large bowl, combine the flour, cornstarch, salt, black pepper, and cayenne pepper. In another bowl, whisk the egg and buttermilk together.
Coat the Calamari
Dip the calamari rings into the egg mixture, allowing excess to drip off, then dredge in the flour mixture until fully coated.
Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Calamari
Fry the coated calamari in batches, without overcrowding, for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Serve
Serve hot with lemon wedges and sweet chili remoulade for dipping.
