Method
Sofreh Base & Breads
Warm and butter the flatbread
Lightly toast or warm 2 pieces of lavash on a dry skillet or in the oven for 1–2 minutes per side until pliable and slightly warmed. Spread 1 tbs softened butter on each warmed flatbread and set them on the serving sofreh (large platter) slightly overlapping as the base.

Prepare cheeses
Place 80 g crumbled feta in a small shallow bowl and set on the sofreh. Spoon 120 g labneh into a separate small bowl; drizzle 1 tsp honey over the labneh (optional) and sprinkle with the 2 tbs chopped fresh herbs. Grind a little of the 1 tsp black pepper over the labneh and feta and place both bowls near the center of the sofreh.
Cold Meze / Small Bites
Arrange 30 g walnuts and 30 g roasted almonds in two small ramekins or directly on the sofreh. Place 80 g mixed olives in a small bowl and add one lemon wedge to it so guests can squeeze if desired. Arrange 60 g pickled vegetables in a separate small dish. If using date syrup, place 1 tsp in a tiny dish for drizzling over cheese or fruit.
Fresh Vegetables & Salad
Slice tomatoes to make about 1 cup and thinly slice half a cucumber and 4 radishes. Fan the tomato slices and cucumber rounds on the sofreh in an attractive pattern. Scatter radish slices for color. Tuck fresh mint leaves and the remaining lemon wedge among the vegetables for garnish and easy use.
Sweet & Fruit
Place 1/2 cup fresh grapes or pomegranate arils in a small bowl and arrange 4 dried apricots or figs near the fruit bowl. Drizzle 1 tbs honey lightly over the dried fruit or offer honey separately so guests can drizzle to taste.
Spreads & Finishing Touches
Sprinkle 1 tsp sumac over the tomato slices for bright, tangy color. Check seasoning of cheeses and vegetables and provide extra black pepper to taste. Arrange small spoons and spreaders so guests can serve labneh, feta, honey, or date syrup as desired. Make sure every dish on the sofreh is reachable and visually balanced.
Serve
Serve the Ziba Set Sofreh immediately while breads are warm. Encourage guests to tear warm lavash, spread labneh or crumbled feta, add olives, pickles, nuts and fruit, squeeze lemon to brighten flavors, and enjoy a shared, leisurely meal.
