Prepare yogurt base
In a small shallow serving dish (for a single-person sofreh), combine 3 tbsp plain Greek yogurt and 2 tbsp labneh. Stir gently until smooth and slightly thick. Season with a pinch of salt and a pinch of freshly ground black pepper. Use the back of a spoon to spread the yogurt into an even circular layer about 1/4 inch thick, leaving a small rim for arranging toppings.
Prepare vegetables and herbs
Thinly slice 1 small cucumber into rounds or ribbons. Halve 4 cherry tomatoes. Thinly slice 2 radishes. Roughly chop 1 teaspoon each of fresh dill and fresh parsley. Pick 6 fresh mint leaves (leave whole or tear slightly).
Toast and chop nuts
Warm a small dry skillet over medium heat. Add 1 tablespoon walnuts and toast, shaking the pan, for 1–2 minutes until fragrant but not browned. Remove and chop roughly. Chop 1 tablespoon shelled pistachios. Set aside to cool slightly.
Arrange fresh toppings
Neatly arrange the cucumber slices, cherry tomato halves, and radish slices around and partially on the yogurt base to create a visually appealing sofreh. Scatter the fresh herbs (mint, dill, parsley) over the vegetables. Place 3 pitted olives and 2 slices of pickled cucumber to one side as accent items.
Add nuts, seeds, and pomegranate
Sprinkle the toasted walnuts and chopped pistachios over the yogurt and vegetables. Scatter 2 tablespoons pomegranate arils across the top for brightness and color.
Serve
Serve immediately with 1 warmed piece of flatbread or lavash for scooping. The sofreh is intended to be shared-style for one person—use bread to take bites of yogurt, herbs, vegetables, nuts, and fruit together.
