Method

Infuse and Prepare Custard

Toast saffron (optional)

Lightly toast the saffron threads in a dry skillet over low heat for 15–30 seconds until fragrant. Remove immediately to avoid burning.

Crush the toasted saffron threads between your fingers or with a mortar and pestle and transfer them to a small heatproof bowl. Add 2 tablespoons of the warm milk (from the measured milk) or 1 tablespoon hot water and let the saffron steep for 10–15 minutes to extract color and aroma.

In a medium saucepan, combine the heavy cream, the remaining milk, and 1 tablespoon granulated sugar (for custard). Warm over medium-low heat until the mixture is hot and small bubbles form at the edges, but do not boil (about 5–7 minutes). Stir occasionally to prevent skin forming.

Remove the cream-milk mixture from the heat. Stir in the saffron infusion (including threads) and the vanilla extract. Cover and let steep for 20 minutes off the heat so the saffron and vanilla infuse the dairy.

Make and Strain Custard

While the dairy is steeping, place the egg yolks in a medium bowl and whisk gently to break them up. Add a pinch of fine sea salt.

Slowly temper the yolks: return the infused cream mixture to a gentle warmth (reheat gently if it cooled), then very slowly drizzle about 1/3 cup of the warm cream into the yolks while whisking continuously to raise their temperature without scrambling.

Gradually add another 1/3–1/2 cup of the warm cream while whisking, then pour the tempered yolk mixture back into the saucepan with the remaining cream, whisking to combine.

Cook the combined custard over low heat, stirring constantly with a wooden spoon or silicone spatula, until it thickens slightly and coats the back of the spoon (170–175°F / 76–80°C). Do not allow it to boil.

Remove from heat and strain the custard through a fine-mesh sieve into a clean bowl to remove any saffron strands or coagulated bits. This yields a silky custard.

Bake in Water Bath

Preheat the oven to 325°F (160°C). Place four 6-ounce (180 ml) ramekins in a deep baking dish or roasting pan.

Pour the strained custard evenly into the ramekins (leave a little headspace). Cover each ramekin loosely with aluminum foil to reduce surface skin if desired.

Carefully pour hot (not boiling) water into the baking dish to come halfway up the sides of the ramekins to create a bain-marie.

Bake for 35–40 minutes, or until the custards are set around the edges but still slightly jiggly in the center. A thermometer inserted near the center should read about 170–175°F (76–80°C).

Remove the ramekins from the water bath and discard the water. Let cool to room temperature on a rack, then refrigerate uncovered for at least 2 hours and up to 48 hours to fully set.

Caramelize and Garnish

When ready to serve, sprinkle about 3/4 teaspoon of the granulated sugar (from the brûlée top sugar) evenly over each chilled custard surface. For a more even crust, tilt and tap the ramekin to distribute sugar.

Using a kitchen torch, carefully caramelize the sugar by moving the flame in a steady circular motion until the sugar melts, bubbles, and turns a deep amber color (about 1–2 minutes). Let the caramel harden for 1–2 minutes. If you don't have a torch, place ramekins under a very hot broiler set about 6 inches from the heat; watch closely and broil 1–3 minutes until caramelized.

Sprinkle the sliced pistachios and slivered almonds around the edge of each brûlée for crunch. Optionally scatter a few edible rose petals on top for color and fragrance.

Serve immediately so the caramel is crisp. Leftovers can be refrigerated (without caramel) up to 2 days; re-crystallize sugar just before serving.
