Cake (Sponge)
Bloom saffron
Place saffron threads in a small bowl and pour 2 tablespoons of hot water over them. Let steep 10 minutes, then crush threads with the back of a spoon to release color and aroma.
Preheat and prepare pan
Preheat oven to 350°F (175°C). Butter and line an 8x8-inch (or 9-inch round) baking pan with parchment, leaving an overhang for easy removal.
Dry ingredients
Whisk together all-purpose flour, baking powder, and salt in a medium bowl until evenly combined; set aside.
Beat eggs and sugar
In a large bowl, whisk or beat the 4 large eggs with the 1 cup granulated sugar until mixture is thick, pale, and slightly increased in volume (about 3–4 minutes by electric mixer on medium-high; 6–8 minutes by hand).
Combine batter
Fold the dry ingredients into the wet mixture in two additions using a spatula, mixing until just combined and no large streaks of flour remain. Do not overmix to keep the cake soft.
Bake
Pour batter into prepared pan, smooth the top, and bake in the preheated oven for 25–30 minutes, or until the top is golden and a toothpick inserted in the center comes out with a few moist crumbs. Avoid overbaking to keep cake tender.
Saffron Milk Soak
While the cake is baking or cooling, prepare the saffron milk. In a small saucepan, combine 1 cup whole milk, 1/4 cup heavy cream, and 1/4 cup granulated sugar. Warm over low heat until sugar dissolves and mixture is hot but not boiling (about 3–4 minutes).
Place the cooled cake on a serving plate or leave it in the pan. Using a fork or skewer, poke holes all over the surface (about 12–16 evenly spaced holes). Slowly pour or brush the saffron milk over the cake in batches, allowing it to absorb (about 1–2 minutes between pours). Use all the milk so the cake is moist but not swimming; it should feel saturated but hold its shape.
Mascarpone-Pistachio Topping
Chill a mixing bowl and whisk attachment briefly (optional) so cream whips more easily. In a cold bowl, combine 8 oz cold mascarpone, 1/2 cup cold heavy cream, 3 tablespoons powdered sugar, 1/2 teaspoon vanilla extract, 1/4 teaspoon ground cardamom, and 1 teaspoon lemon zest (if using).
Whip the mixture on medium speed until it is smooth and holds soft peaks, about 1–2 minutes. Do not overbeat or mascarpone can split; stop when the mixture is creamy and pipeable.
Fold in 1/2 cup finely chopped pistachios, reserving 1–2 tablespoons for garnish. Taste and adjust sweetness or cardamom if needed.
Spread or pipe the mascarpone-pistachio cream evenly over the top of the saffron-soaked cake. Smooth with an offset spatula or use a piping bag for decorative rosettes.
Garnish and Finish
Sprinkle the reserved chopped pistachios and the 2 tablespoons rough-chopped whole pistachios over the mascarpone layer. Scatter a few extra saffron threads and optional edible rose petals for visual appeal.
Chill the assembled cake in the refrigerator at least 1 hour (preferably 2–3 hours) to let the topping set and flavors meld. This cake can be served chilled or at cool room temperature.
Slice with a sharp knife dipped in hot water and wiped dry between cuts for clean slices. Serves with extra mascarpone or a dusting of powdered sugar if desired.
