Method
Prepare Watermelon Base
Blend
Place the chilled watermelon cubes, lime juice, and granulated sugar into a blender. Pulse on high until completely smooth, about 30–45 seconds. Taste and adjust sweetness with up to 1 more teaspoon sugar if needed.
Strain the blended watermelon through a fine-mesh sieve into a bowl or pitcher to remove pulp and ensure a smooth mocktail. Use a spoon to press the puree and extract as much liquid as possible. Discard solids.
Add Rose & Ziba's Special
To the strained watermelon juice, add the rose water and Ziba's special syrup. Stir gently for about 10 seconds to combine. Taste and, if you want a stronger floral note, add an extra 1/4 tsp rose water (do this sparingly).
Assemble & Finish
Fill two serving glasses halfway with crushed ice (about 1/2 cup ice per glass). Divide the watermelon-rose mixture evenly between the glasses, pouring over the ice.
Top each glass with about 1.5 oz club soda or sparkling water to add effervescence. Gently stir once with a bar spoon to integrate without flattening the bubbles.
Slap 3 mint leaves between your palms to release aroma, then tuck them into each glass as garnish. Scatter a few edible rose petals on top if using.
