Method
Prepare Infused Mint
Bloom the dried mint
Place the dried mint in a small heatproof cup. Pour 2 tablespoons of boiling water over the mint and let steep for 5 minutes to release aroma and soften bitter edges. Strain and reserve the mint-infused liquid; discard solids or reserve a pinch for garnish.
Make Doogh
In a blender or large mixing pitcher, add the plain yogurt and cold water. Blend (or whisk vigorously) until completely smooth and slightly frothy, about 30–60 seconds in a blender or 2–3 minutes by hand.
Add the cooled mint-infused liquid, rose water, salt, and sugar or honey (if using). Blend or whisk for another 15–30 seconds to incorporate. Taste and adjust: add up to 1/2 teaspoon more salt or an extra 1/4–1/2 teaspoon rose water if desired, but add rose water sparingly to avoid overpowering the drink.
Stir in ice cubes or transfer the mixture to a pitcher filled with ice to chill quickly. If you prefer a very fizzy version, gently pour in 1/4 cup chilled sparkling water per serving just before serving (optional).
Serve & Garnish
Pour the doogh into 4 tall glasses. Add a few pieces of ice to each glass if not already chilled.
Garnish each glass with a sprig of fresh mint and a pinch of dried rose petals. If you reserved some softened dried mint solids from the steeping step, sprinkle a small pinch on top for extra aroma.
Serve immediately. Stir gently before drinking if it has settled.
