Preparing and Browning the Lamb

Season and dust

Pat the lamb cubes dry with paper towels. Season with 1 1/2 tsp salt and 1 tsp freshly ground black pepper. If using, lightly toss the lamb with 2 tbs flour to promote browning; shake off excess.

Brown the lamb

Heat 2 tablespoons of vegetable oil in a heavy-bottomed Dutch oven or deep skillet over medium-high heat until shimmering. In batches (do not overcrowd), add lamb cubes and sear until browned on all sides, about 4–6 minutes per batch. Transfer browned lamb to a plate and set aside. Add remaining 1 tablespoon oil between batches if needed.

Building the Stew

Reduce heat to medium. In the same pot, add the finely chopped onion and sauté, stirring occasionally, until soft and translucent, about 6–8 minutes. If pan looks dry, add a splash of oil.

Add the minced garlic and cook for 30–45 seconds until fragrant, taking care not to burn it.

Stir in 2 tablespoons tomato paste and cook, stirring constantly, 1–2 minutes to caramelize and remove raw edge from the paste.

Add the diced fresh tomatoes (or canned crushed tomatoes) and stir to combine. Cook 3–4 minutes to loosen any browned bits from the bottom of the pot.

Return the browned lamb and any accumulated juices to the pot. Add the pierced dried limes, 800 ml warm water or stock, 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp paprika, and 1/2 tsp sugar (if using). Stir to combine.

Bring the stew to a gentle simmer, then reduce heat to low. Cover partially and simmer until lamb is tender, about 60–75 minutes. Skim any excess foam or fat from the surface occasionally. If liquid reduces too much, add a splash of water or stock to keep meat mostly submerged.

Preparing and Adding the Okra

While the lamb simmers, prepare the okra: trim stems and remove any tough tips. If desired to reduce sliminess, you can pat okra dry and quickly sauté whole or halved pods in 1 tablespoon oil over high heat for 2–3 minutes until lightly charred; alternatively add raw okra directly to stew (both methods are traditional).

About 15 minutes before the lamb is done (when meat is nearly tender), add the okra to the pot. If you pre-sautéed the okra, add it now and stir gently. Simmer uncovered or partially covered 12–15 minutes until okra is cooked through but still holds shape. Avoid overcooking to prevent mushiness.

Finishing and Serving

Taste the stew and adjust seasoning with additional salt and pepper as needed. If the dried limes gave strong bitterness, remove them or keep them depending on preference; you may squeeze them slightly to release more flavor before removing.

If using, stir in 1 tablespoon lemon juice to brighten flavors. Remove and discard the pierced dried lime shells before serving unless you want to serve them whole for presentation.

Garnish with 3 tablespoons chopped fresh cilantro or parsley. Serve hot over steamed rice, bulgur, or with flatbread.
