Prepare fruit and puree
If not using pre-frozen dragon fruit, peel and dice 1 medium dragon fruit and freeze in an airtight container for at least 3 hours. Slice half a fresh starfruit into thin segments and reserve one thin slice for garnish. If using fresh purple sweet potato, roast or steam until tender, mash and cool; measure out 2 tablespoons of cooled puree.
Slice the banana and measure out frozen blueberries. Chill the serving glass in the freezer for 5–10 minutes if desired.
Blend
Combine ingredients
In a high-speed blender add the frozen dragon fruit cubes (1 cup), frozen blueberries (1/2 cup), sliced starfruit (1/2 cup), banana (1/2 banana), and 2 tablespoons purple sweet potato puree.
Add liquids: pour in 3 tablespoons unsweetened coconut milk, 1 cup cold coconut water, and 2 tablespoons yogurt if using. Add 1 teaspoon honey or agave and 1 teaspoon fresh lemon juice. If using matcha powder, add 1/2 teaspoon now.
Blend to desired texture
Secure lid and blend on high for 45–90 seconds until smooth and vibrant purple-pink. If the mixture is too thick, add up to 2 tablespoons more coconut water and pulse again. If it’s too thin, add a few more frozen dragon fruit cubes or 1/4 cup ice and pulse to thicken.
Finish & Serve
Pour the smoothie into the chilled glass. Sprinkle 1 teaspoon chia seeds over the top if using. Garnish with the reserved starfruit slice, a few fresh blueberries, and 3 mint leaves on the rim or floated on top.
Serve immediately with a reusable straw. Stir before drinking if chia seeds were added.
