Sift matcha
Sift 2 tsp (about 4–5 g) ceremonial-grade matcha into a small bowl or matcha bowl to remove clumps. Sifting yields a smoother, less bitter drink.

Add hot water and whisk
Pour 60 ml of hot water (ideally 75–80°C / 167–175°F) over the sifted matcha. Using a bamboo whisk (chasen) or small handheld frother, whisk briskly in a zig-zag (M or W) motion until the powder is fully suspended and a thin layer of fine froth forms on the surface, about 15–30 seconds.

Fill glass with ice
Fill a 12–16 oz (about 350–475 ml) glass with 1 cup of ice cubes.

Combine concentrate and cold water
Pour the prepared matcha concentrate over the ice. Top with 240 ml cold water. Stir gently with a long spoon to combine, diluting the concentrate evenly. Taste and adjust by adding a touch more cold water if the flavor is too strong.

Garnish and serve
Optionally garnish with a lemon wedge or a sprig of fresh mint. Serve immediately with a straw or stirring spoon.
