Method

Prepare the Herbal Blend

    Measure herbs

    Combine 1 tsp chamomile, 1/2 tsp peppermint, 1/2 tsp lemon balm and 1/4 tsp lavender in a small bowl. If you prefer a rooibos base (for a fuller body), substitute the chamomile and rooibos: use 1 tsp rooibos plus 1/2 tsp chamomile and keep the rest the same.

    If using fresh ginger or cinnamon for a warming infusion, add the sliced ginger and 1/4 cinnamon stick to the teapot or saucepan with the herbs (or simmer separately — see steeping method).

Steeping (Hot Infusion)

    Heat water

    Bring 8 oz (about 240 ml) of filtered water to a gentle simmer. For delicate flowers (chamomile, lavender, lemon balm) you want water just off the boil, about 200–205°F (93–96°C). If using fresh ginger or cinnamon, bring to a full simmer to extract flavor (100°C).

    Steep

    Place the measured herbs into an infuser or teapot. Pour the hot water over the herbs. Cover and steep: 5–7 minutes for chamomile/flower-forward blends, 7–10 minutes if you used rooibos or fresh ginger/cinnamon for a stronger, warming cup. Taste at 5 minutes and extend if you prefer a stronger infusion.

    Strain and finish

    Remove the infuser or strain the tea into a mug using a fine mesh strainer. Add honey (1 tsp) if desired and a lemon slice for brightness. Stir gently. Let cool slightly before drinking.

Cold Infusion (Iced Herbal Tea)

    For a cold brew, combine 2–3 tsp of the dried herbal blend per 16 oz (500 ml) cold filtered water in a pitcher or jar. Add sliced ginger or citrus if desired.

    Cover and refrigerate for 6–12 hours (overnight). Strain through a fine mesh strainer or cheesecloth and serve over ice. Sweeten to taste.

Serving & Variations

    Serves 1 cup. Variations: For a calming bedtime tea, emphasize chamomile and lemon balm and omit peppermint. For an invigorating digestive tea, increase peppermint and add a thin slice of fresh ginger. For a caffeine-free latte, brew a double-strength rooibos-based infusion, strain, heat milk of choice and combine 1:1 (milk:tea), sweeten to taste.

    Storage: Store extra dried blend in an airtight container away from light for up to 6 months. Cold-brewed tea keeps in the refrigerator 48–72 hours.
