Preparation (applies to all flavors)

Make simple syrup (if using sugar)

In a small saucepan combine equal parts sugar and water (for example 1/4 cup sugar + 1/4 cup water). Heat gently until sugar dissolves. Cool completely before use. Alternatively use honey or agave at a 1:1 substitution by volume.

Prepare fruit pulps and purees

If using fresh fruit, wash and peel as required. For seeded fruits (lulo, passion fruit, guanabana) scoop pulp into a fine-mesh sieve and press with the back of a spoon to extract juice and pulp while leaving large seeds behind. For blackberries or mango, blend until smooth and strain if you prefer a seed-free slush. For banana, mash thoroughly or briefly blend to make a smooth puree. For coconut lemonade, combine 1/2 cup coconut water and 1/2 cup freshly squeezed lemon juice (adjust to taste) and chill.

Chill ingredients

Ensure water or coconut water and fruit pulps are cold for a bright, refreshing slush. Use frozen fruit instead of ice for a thicker texture if desired (reduce ice by amount of frozen fruit).

Blending and finishing (per batch, ~2 servings)

Assemble the blender with 1 cup of the chosen fruit pulp or puree, 1 cup cold water or coconut water (for coconut lemonade flavor, use the coconut lemonade base instead), 2 cups ice, 2 tablespoons simple syrup (or to taste), and 1 tablespoon fresh lemon or lime juice.

Pulse the blender 3–4 times to break up the ice, then blend on high for 20–40 seconds until the mixture is uniformly slushy and smooth. If the mixture is too thin, add 1/2 cup more ice or 1/4 cup frozen fruit and blend again. If too thick, add 2–4 tablespoons water and pulse to combine.

Taste and adjust sweetness or acidity: add more simple syrup (1 tsp increments) or more lemon/lime juice (1/2 tsp increments) until balanced for your palate.

If using seeds intentionally (passion fruit), you can blend lightly for texture or strain them after blending for a smoother drink. For a banana pudding style, stir in 1 teaspoon sweetened condensed milk per serving after blending and blend briefly to incorporate.

Serve

Pour the slush into chilled glasses immediately. Garnish with a lime wedge, mint sprig, or a few whole berries or small fruit pieces.

Serve with a straw and a long spoon for thicker slushes. Best enjoyed immediately for optimal texture; if left to sit, the slush will slowly melt — re-blend briefly if needed.
