Coffee base

Milk & ice

Method

Coffee base

  1. 1

    Bloom and dissolve

Place 2 tsp instant coffee and 1 tsp granulated sugar in a small bowl or the bottom of a tall jar. Add 2 tbsp hot water (just off boil). Stir vigorously for 20–30 seconds until the coffee and sugar are fully dissolved and a thick, slightly foamy paste forms.

  2. 2

    Aerate (traditional shake/whisk)

Using either a handheld milk frother, a small whisk, or a tight-sealed jar, whisk/shake the coffee mixture vigorously for 30–45 seconds until it becomes light, aerated, and forms a creamy foam. If using a jar, seal tightly and shake hard until frothy.

Milk & ice

  1. 3

    Prepare glass

Fill a tall glass or serving cup with 6 ice cubes (adjust quantity to taste). Add 3 oz cold whole milk and 1 oz cold water to the glass. If you prefer a creamier drink, replace the water with additional milk.

  2. 4

    Combine

Spoon or pour the aerated coffee foam on top of the iced milk mixture. Use a spoon to gently swirl the foam into the liquid if you prefer it mixed, or leave it layered for presentation.

Optional enrichments

  1. 5

    Sweeten and garnish

If using, stir 1 tsp vanilla syrup into the milk before adding the foam for extra sweetness and flavor. Top the drink with 2 tbsp whipped cream if desired and finish with 1 tsp chocolate shavings or a light dusting of cocoa powder.

  2. 6

Serve immediately with a straw and a long spoon to enjoy the frothy top and chilled coffee beneath.
