Prep corn

If using fresh corn, cut kernels from cobs. Reserve 1/4 cup of whole kernels for texture; set aside. If using frozen corn, thaw and pat dry, reserving 1/4 cup.

Blend base

Place remaining corn kernels (about 1 3/4 cups) and whole milk in a blender. Add the egg and melted butter. Pulse/blend until mostly smooth but still slightly coarse—aim for a texture between purée and coarse mash (25–45 seconds).

Combine dry ingredients

In a large bowl, whisk together arepa flour, all-purpose flour, sugar, salt, and baking powder until evenly distributed.

Mix batter

Pour the blended corn-milk mixture into the dry ingredients. Add the reserved 1/4 cup whole kernels and the optional cream-style corn if using. Stir with a spatula until a soft, slightly sticky dough forms. Let rest 5 minutes to hydrate. If batter feels too loose, add up to 1–2 tbs more arepa flour. If too dry, add 1–2 tbs milk.

Shape arepas

Divide the dough into 6 equal portions (about 3–3.5 oz / golf-ball size). With slightly oiled hands, shape each portion into a thick patty about 3.5 inches (9 cm) wide and 3/4 inch (2 cm) thick. Smooth edges so they hold together.

Cook & finish

Pan-sear

Heat a large nonstick or cast-iron skillet over medium heat. Add 1 tsp butter and swirl. Place arepas snugly in the skillet (work in two batches if needed). Cook until a deep golden-brown crust forms, about 4–5 minutes per side. Reduce heat slightly if they brown too quickly.

Bake (finish through)

After both sides are golden (you may need to flip one extra time), transfer the skillet to a preheated 375°F (190°C) oven or move arepas to a baking sheet and bake for 8–10 minutes to cook through and set the interior. If you prefer softer arepas, brush tops lightly with additional melted butter before baking.

Alternative stovetop only method

If not using an oven, after searing both sides, lower heat to low, cover the skillet tightly, and cook 8–10 minutes, flipping once halfway, until cooked through.

Serve

Split each arepa partially or open like a pocket. Fill with crumbled queso fresco and chopped scallions if desired, or top with a drizzle of honey and a spoonful of crema for a sweet-savory finish. Serve warm.
