Combine spices and liquids

In a small saucepan combine 1 cup water, 1 cup whole milk, crushed cardamom pods, peppercorns, whole cloves, smashed ginger, cinnamon stick and ground nutmeg. Bring to a gentle simmer over medium heat.

Add tea and sugar

Once the liquid is simmering, add the black tea (tea bags or strong loose tea) and 3 tablespoons brown sugar. Stir to dissolve sugar. Reduce heat to low and let simmer very gently for 4–6 minutes, uncovered, to extract flavor. Do not boil vigorously.

Steep and strain

Remove from heat and let steep off-heat for 5 minutes for a stronger concentrate. Strain the mixture through a fine mesh sieve or cheesecloth into a heatproof container, pressing on solids to extract liquid. Discard solids. Taste and adjust sweetness; add up to 1 tablespoon more sugar if you prefer sweeter concentrate.

Cool

Allow the chai concentrate to come to room temperature, then chill in the refrigerator until cold (at least 30 minutes). You can make this concentrate ahead and store refrigerated up to 5 days.

Prepare blender

Add 2 cups of ice to a high-powered blender.

Measure liquids

Pour 1 cup chilled chai concentrate and 1 cup cold milk into the blender. If using, add 1 tablespoon vanilla syrup and 1 tablespoon sweetened condensed milk for extra sweetness and creaminess. Add 1/4 teaspoon vanilla extract if desired.

Blend

Blend on high until mixture is smooth and frothy and ice is fully broken down, about 30–60 seconds depending on blender power. Stop and scrape sides once if needed and blend again to reach a slushy, thick consistency.

Adjust consistency and sweetness

If the frappe is too thick, add up to 2 tablespoons cold milk and pulse to combine. If it’s too thin, add a handful more ice and re-blend. Taste and add more sweetener (vanilla syrup or sugar) in small increments if needed.

Serve

Pour the chai latte frappe into two chilled tall glasses. Top each with an even portion of whipped cream (about 1/4 cup per glass) and dust with a pinch of ground cinnamon.

Optional garnish and tips

For a cafe-style finish, drizzle a small amount of caramel or chai-spiced syrup over the whipped cream. If you want an extra spicy note, sprinkle a tiny pinch of freshly grated nutmeg on top. Serve immediately with a straw.
