    Wash the chinotto fruits thoroughly under running water to remove any dirt or impurities.

    Cut the chinotto fruits in half and squeeze the juice into a bowl, discarding the seeds. You should have about 200 ml of chinotto juice.

    In a saucepan, combine the extracted chinotto juice, sugar, and 1 litre of water. Stir well over medium heat until the sugar dissolves completely.

    Once the sugar is dissolved, add the citric acid to the mixture and stir until fully incorporated.

    Remove the saucepan from heat and allow the syrup to cool to room temperature.
