Prepare the Sausage Mixture
In a large mixing bowl, combine the ground pork, fennel seeds, minced garlic, salt, black pepper, red pepper flakes, and chopped parsley. Mix well until all ingredients are evenly distributed.

Stuff the Sausage Casings
Rinse the natural sausage casings under cold water and soak them in water for at least 30 minutes. Using a sausage stuffer, carefully fill the casings with the sausage mixture, being careful not to overstuff. Twist the sausages into 15-20 cm links and tie the ends with kitchen twine.

Cook the Sausages
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.

Add the stuffed sausages to the skillet and cook until browned on all sides, about 10-12 minutes.

Make the Sauce
Pour in the tomato sauce, and sprinkle with oregano and bay leaves. Stir to combine, then reduce the heat to low and simmer for 20-25 minutes, allowing the flavors to meld.
