Preparing the Pasta

Cook the Rigatoni
In a large pot, bring salted water to a boil. Add the rigatoni and cook according to package instructions until al dente, usually about 10-12 minutes.

Drain and Set Aside
Once cooked, drain the rigatoni in a colander and set aside. Reserve about 1 cup of pasta water for later use.
Making the Bolognese Sauce

Sauté the Vegetables
In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are soft.

Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 8-10 minutes.

Stir in the crushed canned tomatoes, tomato paste, red wine, dried oregano, dried basil, salt, and black pepper. Bring to a simmer.

Reduce heat to low and let the sauce simmer for about 30 minutes, stirring occasionally. If the sauce becomes too thick, add a bit of the reserved pasta water.
