Preparation
- 1
Cook the Pasta
Bring a large pot of salted water to a boil. Add the linguini and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the linguini and set aside.
- 2
Clean the Clams
Rinse the clams under cold water to remove any sand or grit. Soak them in fresh water for about 30 minutes to help purge any remaining sand.
Cooking
- 3
Sauté the Garlic
In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant, but not browned.
- 4
Add Clams and Wine
Add the cleaned clams and crushed red pepper flakes to the skillet. Pour in the white wine and cover the skillet. Cook for about 5-7 minutes, or until the clams have opened. Discard any clams that remain closed.
- 5
Combine Pasta and Sauce
Add the drained linguini to the skillet with the clams. Toss to combine, adding reserved pasta water a little at a time as needed to create a light sauce. Season with salt and black pepper to taste.
- 6
Garnish and Serve
Remove from heat and stir in the chopped fresh parsley. Serve immediately in bowls, garnished with more parsley if desired.
