Mash the Potatoes
While the potatoes are still warm, peel off the skins and place them in a large mixing bowl. Use a potato masher or ricer to mash them until smooth. Allow the mashed potatoes to cool completely.

Form the Gnocchi
Divide the dough into four portions. On a lightly floured surface, roll each portion into a long rope about 1/2 inch thick. Cut the rope into 1-inch pieces. If desired, you can use a fork to create ridges on the gnocchi for better sauce adherence.

Bring a large pot of salted water to a boil. Carefully drop the gnocchi into the boiling water. They are done when they float to the surface, which will take about 2-3 minutes. Use a slotted spoon to remove them and transfer to a plate.
