Brownie

Prepare and preheat

Preheat oven to 350°F (175°C). Line an 8x8-inch (20x20 cm) baking pan with parchment paper leaving a 1–2 inch overhang for easy lifting; lightly butter the parchment.

Melt chocolate and butter

Place chopped semisweet chocolate and butter in a heatproof bowl set over a saucepan of barely simmering water (double boiler). Stir until fully melted and smooth, then remove from heat and let cool 3–5 minutes.

Mix sugars and eggs

Whisk granulated and brown sugar into the slightly cooled chocolate mixture until combined. Add the eggs one at a time, whisking vigorously after each until fully incorporated. Stir in vanilla extract.

Add dry ingredients

Sift together flour, cocoa powder, and salt. Fold the dry mixture into the chocolate mixture with a rubber spatula just until no streaks of flour remain. Fold in chocolate chips or nuts if using. Batter will be thick and glossy.

Bake

Spread batter evenly into prepared pan, smoothing the top. Bake 20–25 minutes, rotating halfway, until a toothpick inserted into the center comes out with a few moist crumbs (avoid overbaking for fudgy brownies).

Cool

Remove brownies from oven and cool in pan on a wire rack for 30 minutes. Use parchment overhang to lift brownies from pan and cool completely (at least another 30 minutes) before slicing into 4 generous squares.

Cremas glaze

Combine heavy cream, sweetened condensed milk, evaporated milk, powdered sugar, vanilla, and salt in a small saucepan. Warm over medium-low heat, whisking until sugar dissolves and mixture is smooth; do not boil. Heat just until steam rises and glaze is slightly thickened, about 3–5 minutes. Remove from heat and let cool to warm (not hot) — it should be pourable but slightly thickened.

If glaze becomes too thick as it cools, whisk in 1–2 teaspoons of warm milk or cream to reach a smooth pourable consistency. Keep warm in a small bowl or thermos until ready to assemble.

Chocolate drizzle

Place chocolate and oil in a small microwave-safe bowl and microwave in 20-second bursts, stirring between bursts, until fully melted and glossy. Alternatively, melt over a double boiler. Transfer to a small piping bag or a zip-top bag with a tiny corner snipped.

Assembly & serving

Place one warm (or room-temperature) brownie square on a dessert plate. Top with one scoop of vanilla ice cream (or two if you prefer).

Generously spoon or drizzle the warm cremas glaze over the ice cream and brownie so it cascades down the sides. The glaze can be warm but not boiling to avoid melting the ice cream too quickly.

Finish with a generous chocolate drizzle from the piping bag in a zigzag or decorative pattern. Sprinkle a tiny pinch of coarse sea salt over the finished dessert to brighten flavors (optional).

Serve immediately with a small spoon. Leftover glaze can be refrigerated up to 3 days and gently reheated; brownies keep in an airtight container at room temperature for 2 days or refrigerated for up to 5 days (bring to room temp before serving).
