Directions
Prepare the Rice
Rinse the glutinous rice under cold water until the water runs clear. Soak in water for at least 4 hours or overnight. Drain.
Steam the Rice
Place the soaked rice in a steamer basket lined with cheesecloth. Steam over boiling water for about 25-30 minutes, or until the rice is tender and sticky.
Make the Coconut Sauce
In a saucepan, combine coconut milk, sugar, and salt. Heat over medium heat until the sugar dissolves. Do not boil.
Combine Rice and Coconut Sauce
Once the rice is cooked, transfer it to a bowl and pour 3/4 of the coconut sauce over it. Mix well and let it sit for 15-20 minutes to absorb the flavors.
Prepare the Mango
While the rice is resting, peel and slice the ripe mangoes into thin strips.
Serve
To serve, place a portion of the sticky rice on a plate, top with mango slices, and drizzle with the remaining coconut sauce. Garnish with sesame seeds or mung beans if desired.
