Prepare glass and mint

Place 10 fresh mint leaves into a sturdy highball or Collins glass. Add 0.75 oz simple syrup and 1 oz fresh lime juice to the glass.

Muddle

Gently muddle the mint, syrup, and lime juice with a muddler or the back of a spoon for about 5–8 seconds. Press firmly enough to release the mint oils but avoid shredding the leaves into tiny bits, which can create bitterness.

Add rum and ice

Pour 2 oz white rum into the glass. Fill the glass roughly three-quarters full with crushed ice (about 1 cup).

Stir and top

Using a long spoon or bar spoon, stir the mixture gently for 6–8 seconds to combine and chill. Top with about 2 oz club soda (adjust to taste) and give one gentle stir to lift the mint and mix the soda without flattening too much carbonation.

Garnish and serve

Add a lime wedge or wheel to the rim and a fresh mint sprig. If desired, slap the mint sprig between your hands once to release aroma before placing it in the drink. Serve immediately with a straw.
