Oysters
Chill and prepare oysters
Keep oysters cold until ready to serve. Place crushed ice in the center of a serving tray or bowl to form a stable bed for the shells.
Shuck oysters
Using an oyster knife and a kitchen towel or glove to stabilize the oyster, insert the tip at the hinge and twist gently to pop it open. Run the knife along the top shell to sever the muscle and remove the top shell. Hold the oyster level and slide the knife under the oyster meat to free it from the bottom shell while keeping the oyster liquor (natural juices) in the shell.
Arrange on ice
Place each shucked oyster on the prepared bed of crushed ice, cup-side down so the liquor stays in the shell. Space them evenly (6 oysters) so they sit stable and chilled.
Condiments & Garnishes
Prepare lemon
Cut the lemon into wedges (6 wedges). Place wedges on the serving tray between oysters for guests to squeeze over the oysters to taste.
Serve mignonette and cocktail sauce
Spoon the prepared mignonette into a small bowl and the cocktail sauce into another small bowl. Place both bowls on the serving tray or alongside the oysters so diners can add to taste. If you prefer, drizzle about 1/2 teaspoon of mignonette on 2–3 sample oysters to highlight flavor.
Final seasoning and garnish
Offer freshly ground black pepper to taste. Optionally, sprinkle a few small leaves of parsley or sea purslane around the ice for color. Do not over-season — the goal is to complement the oyster's natural briny flavor.
