Chill glass

Place a coupe or chilled cocktail glass in the freezer for at least 5 minutes or fill it with ice water while you prepare the drink to cool it down.

Measure and combine

In a cocktail shaker, add 2 oz light white rum, 1 oz freshly squeezed lime juice (about one medium lime), and 0.75 oz simple syrup. Using fresh lime juice is important for brightness and balance.

Add ice and shake

Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 10–15 seconds until the shaker is very cold and you feel condensation forming on the exterior. This both chills and dilutes the drink to proper balance.

Prepare glass (optional)

If you prefer a slightly sugared rim, wet the edge of the chilled glass with a lime wedge and lightly dip into a small plate of superfine sugar. Tap off any excess.

Double-strain and serve

Remove the ice from the chilled glass if you used ice water. Double-strain the cocktail through a fine-mesh strainer into the chilled coupe or cocktail glass to remove ice shards and any pulp for a silky texture.

Garnish

Express the oils of a lime twist over the drink or float a lime wheel on the surface. Serve immediately.
