Prepare Brie and Coating

Chill the Brie

Remove the Brie from its packaging and, if it has a thick rind you dislike, trim a thin strip from the top (optional). Place the whole wheel on a small plate, cover loosely with plastic wrap, and chill in the refrigerator for 30–45 minutes until firm but not frozen. Chilling helps the cheese hold shape while breading.

Set up breading station

Place the flour in a shallow bowl. In a second bowl, whisk the eggs until smooth. In a third shallow bowl, combine breadcrumbs, grated Parmesan, salt, and pepper. If using panko, press lightly so crumbs adhere better.

Cranberry Compote

While the Brie chills, make the cranberry compote. In a small saucepan over medium heat add cranberries, granulated sugar, brown sugar, orange juice, and water. Bring to a simmer, stirring occasionally. Reduce heat to medium-low and simmer 8–10 minutes until many cranberries have popped and mixture thickens to a jammy consistency.

Remove from heat and stir in orange zest and thyme leaves (if using). Taste and adjust sweetness — add a little more sugar or a splash more orange juice if it’s too tart. Let the compote cool to room temperature; it will continue to thicken as it cools. Set aside.

Bread the Brie

When Brie is chilled, remove from refrigerator. Working quickly but gently, pat the Brie dry with a paper towel. Dredge the wheel lightly in flour, shaking off excess so an even thin dusting remains.

Dip the floured Brie into the whisked eggs, turning to coat completely. Lift and let excess egg drip off for 5–10 seconds.

Press the Brie into the breadcrumb mixture, turning to coat evenly. Press breadcrumbs gently so they adhere; you can do a second egg-and-crumb layer for a thicker crust: return to the egg and then to the crumbs again for a double coating.

Transfer the breaded Brie to a plate and chill 10–15 minutes to set the coating. This prevents the crust from falling off during frying or baking.

Cook the Breaded Brie

Heat a large skillet over medium heat and add 2–3 tablespoons oil. When oil is shimmering but not smoking, add the breaded Brie. Fry 1.5–2 minutes per side until golden brown, using a spatula to turn gently. Reduce heat if crust browns too quickly. After browning all sides (including edges) transfer Brie to a paper-towel-lined plate to drain for 1–2 minutes.

Oven-Bake Method (hands-off, less oil)

Preheat oven to 400°F (200°C). Place the breaded Brie on a parchment-lined baking sheet and spray or brush the crust lightly with oil. Bake 12–15 minutes until crust is golden and cheese inside is softened. For extra browning, switch to broil for 1 minute while watching closely.

Finish and Serve

Transfer the hot breaded Brie carefully to a serving board or small ovenproof dish. Spoon the cooled cranberry compote over the top or serve the compote in a small bowl alongside so guests can add portions.

If using, sprinkle toasted sliced almonds or chopped pecans over the compote and drizzle a little honey or maple syrup across the top for a sweet finish. Garnish with a few extra thyme leaves or orange zest.

Serve immediately with crackers, crostini, or toasted baguette slices for spreading. To slice for sharing, cut into wedges with a sharp knife (the cheese will be soft), or provide small spreading knives so guests can scoop warmed Brie and compote onto crackers.
