1. Prepare the Green Beans

Bring a pot of salted water to a boil. Add the green beans and blanch for about 3-4 minutes until they are bright green and tender-crisp. Drain and immediately plunge them into ice water to stop the cooking process. Drain again and set aside.

2. Stir-Fry

In a large skillet or wok, heat the peanut or vegetable oil over medium-high heat. Add the minced garlic, grated ginger, and sliced red chili. Stir-fry for about 30 seconds until fragrant.

3. Add the Green Beans

Add the blanched green beans to the skillet and stir-fry for another 2-3 minutes until they are heated through.

4. Season the Dish

In a small bowl, mix together the soy sauce, fish sauce, brown sugar, sesame oil, and lime juice. Pour this mixture over the green beans and stir well to combine. Cook for an additional 1-2 minutes.

5. Serve
