Brining the Chicken
In a large bowl, combine water and salt to create a brine. Submerge the quartered chicken in the brine, cover, and refrigerate for at least 4 hours or overnight.
Preparing the Chicken
Remove the chicken from the brine and pat dry with paper towels. Rub the chicken with olive oil and then generously coat with House Rub seasoning, ensuring that all parts are well-seasoned.
Rotisserie Roasting
Preheat your rotisserie grill on medium heat. Place the chicken on the rotisserie spit and secure it tightly. Roast the chicken over an open flame, turning every hour, until the internal temperature reaches 165°F (75°C), approximately 1.5 to 2 hours.
