Combine and season
Add the ground meat to the bowl with the aromatics. Mix in tomato paste, ground cumin, allspice, cinnamon, salt, black pepper, red pepper flakes (if using), and lemon juice. Use your hands or a spoon to combine gently but thoroughly—do not overwork. Taste a small pinch by cooking briefly in a skillet and adjust salt and spices as needed.

Prepare pitas
Slice each pita horizontally to create two thin pockets, or open one side to create a single pocket depending on your pita. If pitas are brittle, warm briefly to make them pliable.

Stuff pitas
Divide the meat mixture into 6 equal portions (about 2.5–3 oz / 70–85 g each). Spread each portion thinly and evenly on one side of a pita half or inside one side of an opened pita, pressing the meat to a roughly 1/8–1/4 inch thickness. Avoid overstuffing so they close easily. Lightly brush the outside of each assembled pita with olive oil (or a mix of olive oil and softened butter) to encourage browning.

Optional sealing
If you prefer, fold the stuffed pita closed and press the edges lightly, or place a second pita half on top to make a sandwich-like pocket.

Cook
There are three excellent cooking options: 1) Grill: Preheat a grill or grill pan to medium-high. Grill each arayes 2–3 minutes per side until the crust is crisp and meat is cooked through and juices run clear. Press gently with a spatula for good contact. 2) Skillet: Heat 1 tbsp olive oil in a large skillet over medium heat. Cook each arayes 3–4 minutes per side, pressing lightly, until well browned and meat is cooked. 3) Oven/Broiler: Preheat oven to 425°F (220°C). Place assembled arayes on a baking sheet, brush with oil, and bake 8–12 minutes, then broil 1–2 minutes to brown the top if needed. Internal temperature of meat should reach 160°F (71°C) for ground lamb/beef.
