Method
Marinated Chicken
Prep the chicken
Trim fat from the chicken breasts and cut into 1 to 1-1/4 inch cubes so they will cook evenly. Aim for about 8-10 pieces per breast.
Marinate
Add the chicken pieces to the marinade and toss to coat thoroughly. Cover and refrigerate at least 1 hour and up to 8 hours (overnight acceptable). For best flavor, marinate 3–6 hours.
Skewer the chicken
If using wooden skewers, soak them in water for at least 30 minutes before threading. Thread 4–6 pieces of chicken onto each skewer, leaving a small gap between pieces so heat circulates. Arrange skewers on a tray, cover, and let sit 15 minutes at room temperature before grilling.
Vermicelli Rice
Cook the rice
Add the rinsed, drained rice to the toasted vermicelli and stir for 30 seconds to coat. Pour in the broth, add salt and pepper, bring to a boil, then reduce heat to low, cover tightly and simmer for 15 minutes or until liquid is absorbed and rice is tender.
Rest
Remove from heat and let the rice sit, covered, for 5–10 minutes. Fluff gently with a fork before serving.
Grill & Finish
Preheat grill
Preheat an outdoor grill or grill pan to medium-high (about 400°F / 200°C). Clean and oil the grates to prevent sticking.
Grill the skewers
Brush the chicken lightly with olive oil. Place skewers on the grill and cook for 3–4 minutes per side, turning once or twice, until the exterior is charred in spots and an instant-read thermometer inserted into the thickest piece reads 165°F (74°C). Total cook time will be about 10–12 minutes depending on heat and piece size.
Rest the chicken
Transfer the cooked skewers to a plate, cover loosely with foil, and let rest 5 minutes to allow juices to redistribute.
