Trim the cauliflower and cut into bite-sized florets (about 1–1½ inch pieces). Rinse and drain well.

Bring a medium pot of water to a boil with 1 cup water, 2 tbs white vinegar and 1 tsp salt. Add the cauliflower florets and blanch 2 minutes — just until slightly tender but still firm. This step helps cook the center while keeping shape.

Drain the florets thoroughly in a colander and spread on paper towels to dry. Pat dry as much as possible (important for batter adhesion and crispness).

Batter

In a large bowl whisk together 1 cup all-purpose flour, 1 tbs cornstarch, 1 tsp baking powder, 1 tsp garlic powder, 1 tsp paprika, 1 tsp black pepper and 1 tsp salt until evenly combined.

Make a well in the center and add 1 beaten egg. Gradually whisk in 3 tbs cold sparkling water (or beer). You want a thick but smooth batter that coats the back of a spoon — add an extra tablespoon of cold liquid if needed. Do not overmix; a few small lumps are fine.

Coating

Place 1 cup panko breadcrumbs (or extra flour) in a shallow dish. Working in batches, dredge each dried cauliflower floret first lightly in extra flour (if using), then dip into the batter to coat completely, allowing excess to drip off, and finally press into panko for a crunchy crust. If you prefer a lighter battered finish skip the panko and just use batter.

Frying & Finishing

Pour neutral oil into a deep saucepan or pot to reach about 2–3 inches depth (should be enough to deep-fry). Heat over medium-high to 350°F (175°C). If you don't have a thermometer, test with a small batter drop — it should sizzle and rise immediately.

Fry the cauliflower in small batches so oil temperature remains steady. Carefully lower florets into the hot oil using a slotted spoon or spider. Fry 3–4 minutes, turning if needed, until golden brown and crisp. Larger florets may take up to 5 minutes. Do not overcrowd the pot.

Use a slotted spoon to transfer fried florets to a wire rack set over a baking sheet or to paper towels to drain. Immediately sprinkle with 1 tsp flaky finishing salt and chopped parsley while hot. Keep warm in a 200°F (95°C) oven if frying multiple batches.

Serve hot with lemon wedges for squeezing over and the dipping sauce on the side.

Quick creamy spicy dip

Whisk together 1 tbs mayonnaise, 2 tbs plain yogurt (or sour cream), 1 tsp hot sauce, 1 tsp lemon juice and a pinch of salt until smooth. Adjust heat or acidity to taste. Chill briefly if desired before serving.
