Peel and dice

Peel the russet potatoes and cut into 1/2-inch (1.2 cm) dice so pieces cook evenly. Aim for uniform cubes about the size of a small dice.

Rinse and soak

Place the diced potatoes in a large bowl, cover with cold water and 1 tablespoon salt. Rinse by swishing, then let soak for 20–30 minutes to remove excess starch. This keeps the potatoes from sticking and helps them crisp.

Dry thoroughly

Drain the potatoes in a colander and spread them on a clean kitchen towel or paper towels. Pat completely dry — removing surface moisture is essential for crisp frying.

For frying

Heat oil

Pour 200 ml neutral oil into a large heavy skillet (cast iron or stainless) or a deep frying pan. Heat over medium-high until oil registers about 180°C (350°F) or a small cube of potato sizzles immediately on contact.

Fry potatoes

Working in one or two batches to avoid overcrowding, add the dried potato cubes in a single layer. Fry, stirring occasionally, until golden and crisp on all sides, about 8–12 minutes per batch depending on pan and potato size. Adjust heat as needed to keep oil hot but not smoking.

Drain and season

Use a slotted spoon to transfer fried potatoes to a plate lined with paper towels to drain. Immediately sprinkle with 1/2 teaspoon of salt (from the 1 tbs earlier used for soaking you already accounted for) and a pinch of black pepper while still hot so the seasoning adheres. Keep potatoes warm in a low oven (around 90–100°C / 200°F) while you prepare the harra sauce if needed.

Harra sauce (garlic & herb mixture)

Prepare the garlic oil

In a small skillet or saucepan, warm 3 tablespoons extra-virgin olive oil over low heat. Add the minced garlic and cook gently for 30–60 seconds just until fragrant — do not brown or burn the garlic. Remove from heat immediately.

Combine herbs and spices

In a bowl, combine the finely chopped cilantro and parsley, red pepper flakes, ground cumin, ground coriander, 1 teaspoon salt and 1/2 teaspoon black pepper. Pour the warm garlic-infused olive oil over the herbs and spices, then stir in the 2 tablespoons lemon juice to make a loose, bright sauce. Taste and adjust seasoning or lemon as needed.

Toss with potatoes

Place the hot fried potatoes in a large mixing bowl. Pour the harra sauce over the potatoes and gently toss with a spatula or spoon until the cubes are evenly coated and the garlic-herb mixture clings to the warm potatoes. The heat will lightly wilt the herbs and bloom the garlic flavor.

Finishing

Transfer the batata harra to a serving platter. Garnish with extra cilantro leaves and serve immediately with lemon wedges for squeezing. Adjust final seasoning with additional salt, pepper, or chili flakes to taste.
