Prepare and brown the protein

Pat the beef or chicken pieces dry and season lightly with 1 tsp salt and 1/2 tsp black pepper. In a large heavy-bottomed pot or Dutch oven, heat 2 tbsp oil over medium-high heat. Add meat in batches so it browns and does not steam, about 4–6 minutes per batch for beef (3–4 minutes per side for chicken). Remove browned pieces and set aside.

Sweat the aromatics

Reduce heat to medium and add remaining 2 tbsp oil. Add the chopped onions and a pinch of salt; cook, stirring occasionally, until very soft and beginning to caramelize, about 12–15 minutes. Add the minced garlic and grated ginger and cook 1–2 minutes until fragrant.

Build the stew

Stir in the berbere spice and cook 1–2 minutes to bloom the spices. Add the tomato paste and cook, stirring, 2–3 minutes until the paste darkens slightly. Add chopped tomatoes and scrape any browned bits from the pot. Return the browned meat to the pot.

Simmer slowly

Pour in the stock to just cover the meat (add a little extra water if needed). Add remaining 1 tsp salt, 1/2 tsp black pepper, and brown sugar or honey if using. Bring to a gentle simmer, then reduce heat to low so the stew barely bubbles. Cover partially and simmer very slowly until meat is tender: 1.5–2 hours for chicken, 2–3 hours for beef, stirring occasionally and adding a splash of stock or water if it reduces too quickly.

Adjust seasoning and finish

When meat is fork-tender and the sauce has thickened to a rich, spoon-coating consistency, taste and adjust seasoning. If you want extra heat or depth, stir in 1 tbsp berbere or awaze paste. Sprinkle chopped cilantro or parsley and keep warm while you prepare the derho.

Derho (Spicy Butter Sauce / finishing)

Make the derho while the stew finishes: in a small skillet over low heat, melt 3 tbsp niter kibbeh or unsalted butter. Add the finely minced garlic and cook gently 30–45 seconds until fragrant (do not brown). Stir in 1 tsp berbere and 1 tsp ground fenugreek if using; cook 15–20 seconds to bloom the spices. Remove from heat and stir in 1 tbsp lemon juice. Taste and add a pinch of salt if needed.

Finish the stew with derho: spoon the warm derho over the stew and gently stir 1–2 minutes to incorporate. The butter enriches and rounds the flavors and gives the dish its characteristic sheen. Keep a small extra drizzle of raw berbere or awaze for guests who want more heat.

Rice (optional) / Serving

Cook the rice

Bring 3.5 cups water, 1/2 tsp salt and 1 tbsp oil or butter to a boil in a medium pot. Add the rinsed rice, stir once, return to a gentle boil, then reduce heat to low, cover tightly, and simmer 15–18 minutes until liquid is absorbed and rice is tender. Remove from heat and let rest covered 10 minutes, then fluff with a fork.

Plate and serve

Serve generous portions of zighni over a bed of rice or on top of injera/teff flatbread. Spoon extra derho on top of each portion. Offer additional injera for tearing and scooping, and pass extra berbere or awaze for heat. Garnish with chopped cilantro or parsley.
