Zighini (Spicy Beef Stew)

Method

Zighini (Spicy Beef Stew)

Brown and sauté

Heat a heavy pot over medium-high heat. Add 2 tbs niter kibbeh. When shimmering, add half the beef cubes in a single layer and brown on all sides (3–4 minutes). Remove and repeat with remaining beef, adding more niter kibbeh if needed. Set browned beef aside.

Onions and aromatics

Reduce heat to medium. Add remaining niter kibbeh to the pot and sauté the chopped onions until translucent and beginning to caramelize, about 8–10 minutes. Add garlic and ginger and cook 1 minute until fragrant.

Spice and simmer

Stir in tomato paste and berbere; cook 2 minutes to bloom the spice. Return browned beef to the pot, add beef stock (600 ml), salt and pepper. Bring to a low boil, then reduce to a simmer, partially cover and cook gently for 1.5–2 hours until beef is fork-tender, stirring occasionally. Adjust salt and berbere to taste. Keep warm.

Derho (Tender Lamb with Mild Spices)

Sear lamb

Heat a medium pot over medium heat. Add 1 tbs niter kibbeh and sear lamb pieces in batches until browned on all sides, 3–4 minutes per batch. Remove lamb and set aside.

Build the sauce

Add remaining niter kibbeh and the chopped onion to the pot. Sauté until softened, about 6 minutes. Add garlic and cook 30 seconds. Return lamb to pot, sprinkle mild berbere/paprika and fenugreek, stir to coat.

Simmer until tender

Add 300 ml water or stock and salt. Bring to a gentle simmer, cover and cook for 45–60 minutes until lamb is tender. If needed, uncover and reduce liquid to concentrate flavors. Keep warm.

Kilkil (Beef Strips with Onion)

Quick sauté

Heat a wide skillet over high heat. Add 2 tbs olive oil or niter kibbeh. When hot, add thin beef strips in an even layer and sear without moving 1 minute, then stir and cook another 1–2 minutes until browned but still tender.

Add onions and finish

Push beef to the side, add sliced onion and cook until softened, about 4–5 minutes, stirring with beef. Add garlic, salt and pepper and cook 1 minute. Taste and adjust seasoning. Remove from heat and keep warm.

Derkdtibsi (Pan-Roasted Meat with Peppers)

Sear meat

Heat a large skillet or cast-iron pan over medium-high heat. Add 1 tbs niter kibbeh; when hot, add meat cubes in a single layer and sear until deeply browned on all sides, 4–6 minutes. Work in batches if needed. Remove seared meat and set aside.

Vegetables and spice

Add remaining niter kibbeh to the pan and sauté sliced onions until soft, about 5 minutes. Add sliced red and green peppers and cook 4–5 minutes until softened but still bright. Add minced garlic and berbere and cook 1 minute to bloom flavors.

Combine and finish

Return seared meat to the pan, toss to combine with vegetables. Add salt, then cook 3–5 minutes until meat is cooked through and juices have coated peppers. Adjust seasoning and keep warm.

Spinach (Gomen)

Sauté aromatics

Heat a large pot or deep skillet over medium heat. Add 2 tbs niter kibbeh and sauté the chopped onion until translucent, 3–4 minutes. Add minced garlic and cook 30 seconds.

Cook spinach

Add chopped spinach in batches, stirring until wilted and reduced. Cook until all liquid has mostly evaporated and spinach is tender, 6–10 minutes total. Stir in remaining niter kibbeh, salt and pepper. Taste and adjust seasonings. Keep warm.

Cottage Cheese (Ayib)

Season

Place cottage cheese (ayib) in a bowl. Gently fold in salt and freshly ground black pepper to taste so it remains slightly chunky and creamy. Chill briefly if desired. Serve at room temperature.

Teff Injera (to Serve)

Make batter (quick stovetop method)

Whisk teff flour and water until smooth. Let rest 30 minutes if time allows to hydrate. Heat a nonstick or cast-iron skillet over medium-high heat and lightly grease. Stir salt into batter. Pour ~1/3 cup batter into the hot pan and swirl to make a thin, even round (about 9–10" diameter). Cover with a lid and steam-cook 2–3 minutes until surface is set and bubbly and edges lift. Do not flip. Remove and keep covered with a clean towel to stay soft. Repeat to make 6–8 injera.

Alternative

If using a fermented teff starter (traditional), prepare batter 1–2 days ahead and cook injera similarly, adjusting thickness as needed.

Assembly and Serving

Arrange the platter: On a large serving plate lined with several injera, place portions of zighini, derho, kilkil, derkdtibsi and a mound of gomen (spinach). Add spoonfuls of ayib (cottage cheese) beside the meats. Garnish with a drizzle of warm niter kibbeh if desired and a few fresh parsley sprigs.
