Method
Juice Base
Add lime and coconut water
Measure and add 3 tablespoons of freshly squeezed lime juice and 2 cups of chilled coconut water to the blender with the avocado.
Sweetener
Add honey (2 tsp). If using an alternative sweetener like agave or maple syrup, add 1 tsp instead. Start with the lower amount; you can adjust sweetness after blending. If you want a completely unsweetened version, omit this step.
Blend & Adjust
Add 1 cup of ice cubes to the blender (or use chilled coconut water and refrigerate instead of ice for less dilution). Blend on high for 30–60 seconds until completely smooth and frothy. If the mixture is too thick, add an extra 2–4 tablespoons (30–60 ml) of coconut water and blend briefly.
Taste the juice and adjust: add up to 1 more teaspoon of honey or sweetener if you prefer sweeter, and up to 1/4 teaspoon fine sea salt if you want to enhance flavor. If it tastes too tart, add another 1/2–1 tsp sweetener and blend briefly to combine.
Finish & Serve
Pour the avocado and coconut water juice into two chilled glasses, straining through a fine mesh sieve if you prefer a silkier texture (optional).
Garnish each glass with a lime wheel or wedge and 2 mint leaves. Serve immediately.
