A refreshing and crisp white wine cocktail crafted with vodka, fresh fruit, white peach syrup and bright citrus notes.

If using store-bought white peach syrup, measure 120 ml and set aside. To make quick white peach syrup: combine 120 g peeled diced white peach, 120 g sugar and 120 ml water in a small saucepan. Cook over medium heat until sugar dissolves and peaches soften, about 6–8 minutes. Mash slightly, simmer 2 more minutes, then strain. Cool to room temperature before using.

Make or measure peach syrup

Wash the peaches and apple. Slice the white peaches into thin wedges (leave skin on for color). Core and thinly slice the green apple into half-moons to prevent browning (toss with a teaspoon of lemon juice from the measured lemon juice if desired). Halve the grapes. Reserve a few peach slices and mint sprigs for garnish.

Slice fruit

In a large pitcher (1.5–2 L capacity), combine the white wine, vodka, cooled white peach syrup, fresh lemon juice, fresh lime juice and simple syrup if you prefer sweeter sangria. Stir gently to combine.

Add the sliced peaches, apple slices and halved grapes to the pitcher. Stir to submerge the fruit and distribute flavors evenly.

Cover the pitcher and refrigerate for at least 2 hours, preferably 4–6 hours or overnight, to allow the fruit to infuse the wine. For best flavor balance, taste after 2 hours and adjust sweetness with up to 30 ml more simple syrup if needed.

About 15 minutes before serving, remove the pitcher from the refrigerator. If you like a chilled but not diluted sangria, add ice to glasses rather than the pitcher. For a colder drink for larger groups, add ice to the pitcher now.

If using the optional sparkle, gently pour 350 ml chilled club soda or sparkling water into the pitcher right before serving and stir once to incorporate.

Fill each glass with ice (if desired). Use a slotted spoon to divide fruit among 6 glasses, then pour the sangria over the fruit. Garnish each glass with a reserved peach slice, a lemon wheel or twist and a mint sprig.

Serve immediately. Leftover sangria (without added club soda) will keep covered in the refrigerator up to 48 hours; add sparkling water just before serving to maintain effervescence.
