Sushi Rice & Assembly

Cook rice
Rinse 2 cups short-grain sushi rice under cold water until water runs mostly clear. Drain 10–15 minutes. Combine rinsed rice and 2.2 cups water in a heavy pot or rice cooker. If using a pot, bring to a boil covered, reduce to low, and simmer 12–14 minutes without lifting lid. Remove from heat and rest 10 minutes covered.

Season rice
While rice rests, warm 3 tbs rice vinegar, 1.5 tbs sugar and 0.75 tsp kosher salt in a small saucepan just until sugar dissolves (do not boil). Transfer cooked rice to a wooden or plastic bowl; gently fold in the vinegar mixture with a wooden paddle or spatula to coat rice while fanning or allowing steam to escape. Spread rice to cool to slightly above room temperature.

Prepare fillings
Peel and pit the mango; slice half of the mango into long, thin matchsticks for roll filling (reserve 1/2 cup chopped mango for the sauce). If using avocado, slice thinly. Julienne 1/2 cucumber. Lightly season rice surface with 1/2 tsp toasted sesame seeds if desired.

Assemble rolls
Place a bamboo sushi mat covered with plastic wrap. Lay one nori sheet shiny-side down on the mat. With wet hands, spread about 3/4 cup seasoned sushi rice evenly over the nori leaving a 1/2-inch strip at the far edge. Sprinkle a few toasted sesame seeds into the rice. Flip the nori so rice faces down on the mat (inside-out/uramaki style). Arrange a horizontal line of mango matchsticks (about 2–3 tbs), a few cucumber julienne and optional avocado along the center of the nori. Start rolling with the mat, tucking firmly and rolling to make a tight cylinder. Use a little water on the bare nori edge to seal. Repeat to make 4 rolls. Chill briefly 10 minutes to set shape.

Slice seafood
Using a very sharp knife, slice the sushi-grade tuna and salmon into thin 1/8-inch slices (wide enough to drape over roll), approximately 16–20 slices total (4 per roll). Keep fish cold on a clean plate.

Top rolls
Using a sharp, wet knife, cut each roll into 8 equal pieces. On a serving board or tray, place 4 pieces per roll in order. Drape alternating slices of tuna and salmon across the top of each roll piece so they cover the rice exterior. Gently press fish onto rice to adhere.
Tropical Sauce

Make sauce
In a blender or small food processor, combine 1/2 cup chopped mango, 3 tbs mayonnaise, 1 tbs fresh lime juice, 1 tsp honey, 1/2 tbs rice vinegar, 1/2 tsp sriracha and 1/4 tsp salt. Pulse until smooth and slightly creamy. Taste and adjust seasoning or sweetness. If sauce is too thick, thin with 1–2 tsp water. Stir in 1/2 tsp sesame oil for a finishing aroma.

Plate with sauce
Spoon or pipe a small amount of tropical sauce onto each sushi piece (about 1 tsp per piece) or drizzle decoratively across the row. Reserve some sauce for a side dipping if desired.
Garnish & Finish

Finish: Garnish each piece with a tiny dollop of sauce if not already applied, a few microgreens or cilantro leaves, and a light sprinkle of toasted sesame seeds. Serve immediately with pickled ginger, soy sauce and wasabi on the side.

Timing & notes: Keep raw fish chilled until service. Consume the rolls within 2 hours after assembly for best texture and food safety. If making ahead, slice and top just before serving to preserve the fish appearance.
