Method
Prep House Sour

Combine sour ingredients
In a shaker, add fresh lemon juice, simple syrup, and egg white (if using).

Add vodka, light rum, gin, triple sec, and tequila to the shaker with the pre-emulsified sour mixture.

Add ice (about 1 cup or enough to fill the shaker) and shake hard for 10–12 seconds until well chilled (if you used egg white previously, this will further build foam).

Fill a highball or large Collins glass with fresh ice.

Double-strain the shaken mix into the prepared glass to remove small ice shards and any large foam bits.

Top carefully with 3 oz (about 90 ml) Pepsi, pouring slowly to preserve some of the sour foam on top and to avoid excessive fizz.

Garnish with a lemon wheel or wedge on the rim.
