Base Cocktail
Prepare glass and muddle
In a sturdy highball or Collins glass, add the fresh mint leaves (8–10 leaves), the lime wedge used for muddling, and 0.75 oz simple syrup. Gently muddle together 6–8 times—press just enough to release the oils from the mint and the juice from the lime wedge without tearing the mint leaves into small bits.
Add rum and lime
Pour 2 oz white rum and 0.75 oz fresh lime juice into the glass. Stir briefly (4–6 seconds) to combine with the muddled mint and syrup.
Final mix
Use a long bar spoon to gently lift and fold the mint from the bottom to the top 6–8 times to integrate the mint flavor through the drink without over-bruising the leaves.
