    Prepare jalapeños and cheese

    Wash jalapeños, slice each in half lengthwise and remove seeds and membranes with a small spoon for milder heat (leave some seeds for extra heat if desired). Pat jalapeño halves dry with paper towels. If using mozzarella blocks, cut into 3–4 inch sticks roughly the same width as jalapeño halves so each jalapeño half can be wrapped or layered with cheese. If using pre-formed string cheese, trim ends and slightly flatten with the palm to help adhesion.

    Assemble jalapeño-cheese pieces

    Place a mozzarella stick onto each jalapeño half and gently press so cheese adheres. Option A: Lay cheese on top of the cut side of the jalapeño half. Option B (for jalapeño popper style): spoon a small amount of softened cream cheese or shredded mozzarella into the pepper, then press a short mozzarella stick into the filling. Place assembled pieces on a baking sheet lined with parchment and freeze for 20–30 minutes to firm up (this helps prevent cheese from oozing during frying).

    Set up breading stations

    In a shallow bowl or plate combine 1.5 cups flour, 1 tsp salt, 0.5 tsp black pepper, 1 tsp garlic powder and 1 tsp paprika; mix well. In a second shallow bowl whisk together eggs and 3 tbsp milk until homogeneous. In a third shallow bowl combine 2 cups panko breadcrumbs, 0.5 cup grated Parmesan and 1 tsp dried Italian seasoning. In a small bowl mix 0.25 cups flour with 0.25 cups cornstarch (this dry mix will be used for the initial dredge).

    Dredge and double-coat

    Working with chilled jalapeño-cheese pieces, first dredge each piece in the cornstarch-flour mix, shaking off excess. Next, dip into the egg wash, allowing excess to drip off. Finally press into the panko-Parmesan mixture, ensuring an even coat. For an extra-secure shell (recommended), repeat the egg wash and panko coating a second time so each piece has two layers of breadcrumbs. Transfer breaded pieces back to the baking sheet and return to freezer while heating oil, at least 10–15 minutes.

    Heat oil

    Pour vegetable oil into a deep, heavy pot or deep fryer to a depth of about 2–3 inches (or follow your fryer’s fill guidelines). Heat oil to 350°F (175°C). If you don't have a thermometer, test with a small piece of bread or excess breadcrumb — it should sizzle and brown slowly without burning.

    Fry in batches

    Carefully lower 3–4 breaded jalapeño mozzarella sticks into the hot oil (do not overcrowd). Fry for 1.5–3 minutes per batch, turning as needed, until golden brown and crispy. Keep oil temperature close to 350°F; adjust heat to avoid burning. Remove with a slotted spoon or spider and drain on a wire rack over a baking sheet or on paper towels. If any cheese begins to leak, stop frying that batch and reduce oil temperature slightly; ensure sticks were chilled sufficiently next time.

    Finish and serve

    Warm the marinara sauce in a small saucepan or microwave until heated through (to taste). Sprinkle the fried jalapeño mozzarella sticks with a pinch of salt or additional Parmesan if desired and garnish with chopped cilantro or parsley. Serve immediately with warm marinara for dipping.

    Storage and reheating (optional)

    Leftovers are best reheated in a 375°F (190°C) oven on a baking sheet for 8–10 minutes to re-crisp the coating. Do not microwave, as the cheese will likely become rubbery or burst out.
