Cocktail

  1. 1

    Chill glass

Place a highball or Collins glass in the freezer for 5–10 minutes or fill it with ice water while you prepare ingredients to ensure the drink stays cold.

  2. 2

    Prepare cream

If you prefer a slightly lighter, frothier cream, gently shake the heavy cream with the optional 0.25 oz vanilla syrup in a small jar for 10–15 seconds to lightly aerate. Do not whip to stiff peaks; you want a pourable, slightly thickened cream.

  3. 3

    Build the drink

Fill the chilled glass with fresh ice (about 1 cup). Pour 2 oz Sailor Jerry's spiced rum over the ice.

  4. 4

    Add root beer

Slowly pour 6 oz chilled Old-Fashioned Root Beer into the glass over the back of a spoon or down the side to preserve carbonation and avoid excessive foaming. Stir gently with a bar spoon once or twice to combine rum and root beer.

  5. 5

    Finish with cream

Carefully float 1 oz heavy cream on top by pouring it slowly over the back of a spoon held just above the drink surface. The cream will form a layered look and then slowly mingle with the root beer to create a creamy texture.

  6. 6

    Garnish and serve

If desired, grate a small pinch (about 1/8–1/4 tsp) of fresh nutmeg over the cream as a garnish. Serve with a straw and a long spoon so the drink can be stirred to combine cream fully before sipping.
