Filling

    In a medium bowl, beat the softened cream cheese until smooth using a spatula or fork.

    Add the finely chopped imitation crab, thinly sliced green onions, soy sauce, sesame oil, sugar, garlic powder, and white pepper. Mix thoroughly until evenly combined and smooth. Taste and adjust seasoning (add a touch more soy or sugar if desired).

    Cover the bowl and chill the filling for 15–20 minutes to firm slightly — this makes stuffing and sealing easier.

Wrappers & Assembly

    Prepare an assembly station: lay out wonton wrappers on a clean surface, keep a small bowl of water and the egg wash (beat egg with 1 tablespoon water) nearby, and place the chilled filling within reach.

    Place one wonton wrapper in a diamond orientation. Spoon about 1 teaspoon of filling into the center of each wrapper (roughly 1 level tsp; do not overfill).

    Brush the wrapper edges lightly with the egg wash. Fold the bottom corner up to meet the top corner to form a triangle and press edges to seal, removing any air pockets. For the classic purse/rangoon shape: bring the two side corners together over the seal and press to adhere with a dab of egg wash. Ensure all seams are well sealed to prevent oil ingress.

    Place assembled rangoons on a parchment-lined tray in a single layer. Cover lightly with plastic wrap to prevent drying while you finish assembly.

Frying

    Pour oil into a deep skillet or medium pot to a depth of about 2 inches (approximately 2–3 cups depending on pot size). Heat oil over medium-high heat to 350°F (175°C). If you don't have a thermometer, test with a small scrap of wrapper — it should sizzle and brown in about 30–45 seconds.

    Working in batches (do not overcrowd), carefully lower 6–8 rangoons into the hot oil, seam-side down. Fry 1½–2 minutes per side until golden brown and crisp.

    Use a slotted spoon to transfer fried rangoons to a paper-towel-lined plate to drain. Keep finished rangoons warm in a single layer on a baking sheet in a 200°F (95°C) oven while you fry remaining batches.

    Allow oil to cool slightly between batches if needed to maintain a steady temperature; adjust heat to keep oil near 350°F.

Sweet & Sour Sauce

    While rangoons fry, combine rice vinegar, ketchup, soy sauce, brown sugar, and pineapple juice in a small saucepan over medium heat. Stir to dissolve sugar and bring to a gentle simmer.

    Mix cornstarch with 1 teaspoon water to make a slurry. Stir the slurry into the simmering sauce and cook 1–2 minutes until the sauce thickens to a glossy, pourable consistency. Remove from heat. Stir in red pepper flakes if using. Transfer to a small dipping bowl.

Serve & Garnish

    Arrange warm crab rangoons on a serving plate. Sprinkle with sesame seeds and extra sliced green onion if desired.
