Clam Digger Recipe

Prepare rim

Mix the coarse kosher salt and 1/2 tsp celery salt on a small plate. Rub the lime wedge around the outside rim of a highball or pint glass to wet it, then dip and twist the glass into the salt mixture to coat the rim evenly. Set the glass aside.

Build and season

Fill a cocktail shaker or mixing glass with 1 cup of ice. Add 2 oz vodka, 4 oz Clamato juice, 1 oz house-made Digger mix, 1/2 oz fresh lime juice, 2 tsp Worcestershire sauce, 3 dashes hot sauce, 1/2 tsp prepared horseradish, and 1/4 tsp celery salt. Lightly crack black pepper over the top (about 6 cranks).

Mix

Secure the shaker lid and roll or gently shake for 8–10 seconds to chill and combine without over-diluting. If using a mixing glass, stir vigorously for about 10–12 seconds and then double-strain to the prepared glass over fresh ice.

Assemble

Fill the rimmed glass with fresh ice if not already filled. Strain the cocktail into the glass. Taste and adjust heat or seasoning: add an extra dash of hot sauce for more heat or 1/4 tsp more Worcestershire for more umami.

Skewer vegetables

Thread the celery spear, pickled asparagus, marinated green bean, cocktail onion and optional pickled jalapeño onto a long cocktail pick or skewer. Rest the skewer across the rim of the glass or stand the celery spear inside the drink.

Serve immediately with a straw. Provide an optional small dish for discarded garnishes. Advise guests to stir occasionally to keep flavors integrated.
