Make the syrup

Combine sugar and water in a small saucepan and bring to a gentle simmer, stirring until sugar dissolves. Remove from heat and add cilantro and lime zest. Allow to steep for 20 minutes, then strain through a fine mesh sieve or cheesecloth, pressing on solids to extract flavor. Cool to room temperature and refrigerate. Yields ~6 oz; use 0.5 oz per cocktail.

Prepare glass: Chill a coupe or Nick & Nora glass in the freezer for 5–10 minutes. Lightly wet the rim with a lime wedge and dip the edge into a small plate of flaked sea salt to get a delicate salt rim. Return glass to freezer briefly while you build the drink.

Dry shake: In a cocktail shaker, add blanco tequila (2 oz), reposado tequila (0.5 oz), fresh lime juice (0.75 oz), white grapefruit juice (0.75 oz), St-Germain (0.5 oz), cilantro-lime syrup (0.5 oz), falernum or rich simple (0.25 oz, optional) and aquafaba (0.5 oz). Seal shaker and shake vigorously without ice for 10–15 seconds to emulsify the aquafaba and produce a silky foam.

Wet shake: Add 1 cup of ice to the shaker and shake hard for 12–18 seconds until the outside of the shaker is very cold. This chills, dilutes, and integrates ingredients while creating a fine foam.

Double strain: Remove the chilled glass from the freezer. Double strain the cocktail into the prepared coupe through a fine mesh strainer to remove ice shards and ensure a smooth texture and stable foam.

Garnish and finish: Express a thin grapefruit twist over the surface by holding it skin-side down and giving it a quick twist to release oils, then rub the rim lightly with the twist and drop it on the foam. Carefully place a tiny micro cilantro sprig on top of the foam for aroma. Serve immediately.
